Food and nutrition have a profound impact on our health and well-being, yet many of us are not aware of what foods to eat, which diets are healthy, and where our food originates. The goal of this certificate program is to provide individuals who are working in the health care field and those who are interested in the topic a holistic overview of current food and nutrition issues and their impact on physical, social, emotional, and spiritual health.  

Throughout this certificate, you'll become more conscious of what we eat, why we eat it, how it is prepared, and what consequences our food choices have on our health as well as the health of our planet. You'll examine the impact of stress on the body and the health crisis posed by obesity in the U.S. You'll also learn how we can change our eating habits for more healthful outcomes. Ultimately, you'll gain insight into how food interacts with our bodies on multiple levels—physical, mental-emotional, and spiritual—as well as the impact it has globally.

Week 1

Gain insight into the role of food and health in human history and the various elements of nutrition to help you better understand how and why we eat the way we do. You’ll also learn the relationship between food and emotions; to explain the stress response; to discuss the effects of stress on nutrition and health; to define mindful eating and methods of eating mindfully; and to examine elements of nutrition that support a healthy immune system.

Week 2

Examine the extent of obesity in the United States; explain the difference between being overweight and being obese; list the causes of overweight and obesity; examine the health and economic consequences of obesity; and discuss pharmaceutical and surgical options for obese individuals. You’ll also learn about the types of toxins found in food and to examine the effects of irradiation, genetically altered foods, and food allergies on our health.

Week 3

Learn about the concept of spiritual, conscious eating; examine the effects of unconscious eating on the health of humans, animals, and plants, and gain guidelines for individuals who seek to support a lifestyle that includes spiritual nutrition practices. You’ll also get an overview of food labels while learning how to read a Nutrition Fact label, explain food claims in terms of nutritional value, define what organic means, examine the four organic principles, and identify various food labels in terms of their significance to food products.

Week 4

Examine the role of herbs and herbalists, herb processing, how herbalists are trained, and issues facing the use of herbs for a better view of the value of herbs and herbalism. You’ll also gain a historical overview of the role of sugar in the American diet, learn to describe the various definitions of sugar, briefly examine glucose metabolism and the health effects of too much dietary sugar, explain the glycemic index, identify both artificial and natural alternatives to sugar, and list methods of reducing dietary sugar intake.

Week 5

Sales of probiotic supplements have soared in recent years on the basis of intriguing research that demonstrates potential benefits for many chronic conditions, including cancer. Examine what probiotics are (and are not), how they affect our health, the various categories of probiotics, the risks and benefits of their use, how to select a probiotic, pertinent regulatory considerations, and the current research on their use.

Cyndie Koopsen

Cyndie Koopsen, RN, BSN, MBA, HNB-BC, RN-BC, HWNC-BC is a nurse who has cared for patients in acute care settings, community clinics, and the home. Her professional nursing career has involved nursing executive leadership and administration, staff development and education, community education and wellness, and holistic care. She has designed, developed, and presented numerous educational programs for audiences covering integrative health, promotion and wellness, and chronic disease management and prevention. She is the co-author of Spirituality, Health, and Healing and Integrative Health: A Holistic Approach for Health Professionals.

Caroline Young, MPH, has an extensive public health background that includes experience in research, workshop presentations in various areas of health care, and online and onsite teaching. She has expertise in holistic community health and wellness program design, development, marketing, implementation, and evaluation. She has also designed, developed, and presented integrative health programs for culturally diverse populations, senior populations, and faith communities. She is the co-author of Spirituality, Health, and Healing and Integrative Health: A Holistic Approach for Health Professionals.

There are no prerequisites for this course.

The Certificate in Food, Nutrition, and Health consists of a total of nine lessons. You must complete all lessons to receive your certificate.

To complete each lesson, click on the lesson title that you would like to complete. When you are ready to take the final for each lesson, proceed to the Finals section and select the final you wish to take.

You must pass the final exam in all lessons with a score of 80% or higher AND complete the Evaluation Form in order to receive your Certificate of Completion. Finals are graded as Pass or No Pass. Receipt of your certificate indicates successful completion of the course and that you have passed all final exams with a score of 80% or greater. You may retake final exams as many times as necessary within the six week duration of the program at no additional charge.

When can I get started?

A new session of each course opens each month, allowing you to enroll whenever your busy schedule permits!

How does it work?

Once a session starts, two lessons will be released each week, for the six-week duration of your course. You will have access to all previously released lessons until the course ends.

How long do I have to complete each lesson?

Keep in mind that the interactive discussion area for each lesson automatically closes 2 weeks after each lesson is released, so you’re encouraged to complete each lesson within two weeks of its release.

What if I need an extension?

The Final Exam will be released on the same day as the last lesson. Once the Final Exam has been released, you will have 2 weeks plus 10 days to complete the Final and finish any remaining lessons in your course. No further extensions can be provided beyond these 10 days.
