(16 contact hours) Food and nutrition have a profound impact on people's health and well-being, yet many people are not aware of what foods to eat, which diets are healthy, and where their food originates. The goal of this course is to provide a holistic overview of current food and nutrition issues and their impact on physical, social, emotional, and spiritual health.

Throughout this course, you will become more conscious of what you eat, why you eat it, how it is prepared, and what consequences your food choices have on your health as well as the health of the planet. You will also learn how to change your eating habits for more healthful outcomes, including swapping processed sugar for other sweeteners, adding probiotics to the diet, and harnessing the healing effect of herbs.

Ultimately, you will gain insight into how food interacts with your body on multiple levels—physical, mental-emotional, and spiritual—as well as the impact it has globally.

Syllabus

This lesson provides an overview of the role of food and health in human history. The various elements of nutrition and some of the most common types of diets are explored. What people eat profoundly affects their health and well-being: Obesity is at epidemic proportions in the United States.

This lesson explores the relationship between food and emotions; to explain the stress response; to discuss the effects of stress on nutrition and health; to define mindful eating and methods of eating mindfully; and to examine elements of nutrition that support a healthy immune system. Most individuals enjoy sitting down and eating a delicious meal. Food provides an opportunity to socialize and, if the food is nutritious, it also supports a healthy body and mind.

Learn about the concept of spiritual, conscious eating; examine the effects of unconscious eating on the health of humans, animals, and plants, and gain guidelines for individuals who seek to support a lifestyle that includes spiritual nutrition practices. You'll also get an overview of food labels while learning how to read a Nutrition Fact label, explain food claims in terms of nutritional value, define what organic means, examine the four organic principles, and identify various food labels in terms of their significance to food products.

This lesson provides an overview of the types of toxins found in food and to examine the effects of irradiation, genetically altered foods, and food allergies on human health. Diet has a profound impact on human health and well-being, yet many people are not aware of where their food originated. People eat toxic, irradiated, or genetically altered foods, and eat more than they need.

Food is a dynamic force that interacts with human bodies on multiple levels: the physical level, the mental-emotional level, and the energetic or spiritual level. Conscious eating involves an awareness of the eating process from beginning to end, and it includes thinking about how dietary choices affect others. Any food choice that is truly good for an individual's physical health and well-being will also be good for his/her spiritual well-being.

An important element of health is the ability to understand what is in the food you eat. Knowing how to read and understand food labels can help individuals make healthier food choices. The goal of this lesson is to provide an overview of food labels, describe how to read a Nutrition Fact label, explain food claims in terms of nutritional value, define what organic means, examine the four organic principles, and identify various food labels in terms of their significance to food products.

While modern medicine has produced many scientific advances, one of the most important "advances" has been the recognition of the value of herbs and herbalism. After all, nature and plants have been an essential part of everyday life since the beginning of recorded history. The goal of this lesson is to provide an examination of the role of herbs and herbalists, herb processing, how herbalists are trained, and issues facing the use of herbs.   

Most Americans consume far more sugar than they require, and this contributes to obesity as well as many types of diseases. The role of sugar in the American diet is an important one, and understanding its effect on the body and its role in inflammation and disease can significantly impact one's health. Alternatives to refined sugar are numerous, but are they safe and effective?

Probiotics are live organisms believed to be healthy for the host organism. They are used globally to improve the health and well-being of animals and human beings. Sales of probiotic supplements have soared in recent years on the basis of intriguing research that demonstrates potential benefits for many chronic conditions, including cancer.

Cyndie Koopsen is a nurse who has cared for patients in acute care settings, community clinics, and the home. Her professional nursing career has involved nursing executive leadership and administration, staff development and education, community education and wellness, and holistic care. She has designed, developed, and presented numerous educational programs for audiences covering integrative health, promotion and wellness, and chronic disease management and prevention. She is the co-author of "Spirituality, Health, and Healing and Integrative Health: A Holistic Approach for Health Professionals."

Caroline Young, M.P.H., has an extensive public health background that includes research experience, workshop presentations, and instruction. She has designed, developed, and instructed numerous integrative health programs for diverse populations, senior populations, and faith communities. Young is the co-author of "Spirituality, Health, and Healing and Integrative Health: A Holistic Approach for Health Professionals."

The cost was fair and very reasonable, making the material available to a wide range of consumers and professionals. It was surprisingly current and up-to-date. It was surprisingly unbiased. I'm very skeptical that so much nutritional information is provided to consumers today in a very biased manner. There always seems to be an agenda. Blatant claims are made about one food or another or specific food groups that often seem, to me, to be overblown. This course had none of that, and I appreciate the thought and pre-criticism that these two instructors put into the course materials. Thank you for this wonderful class.
