What you will learn
- Apply professional kitchen standards for mise en place, safety, sanitation, knife handling, equipment care, and efficient workflow
- Select and use dry-heat, moist-heat, and combination cooking methods to prepare vegetables, grains, pasta, eggs, meats, poultry, fish, stocks, soups, sauces, breads, pastries, and plant-forward dishes
- Develop flavor, seasoning, plating, nutrition, and menu-planning strategies for professional food service and varied dietary needs
- Implement food protection practices involving personal hygiene, cross-contamination prevention, time and temperature control, facility management, and food safety management systems
- Calculate food and labor costs, assess menu profitability, and support budgeting, purchasing, receiving, inventory, and waste-control decisions
- Apply supervisory and leadership practices for communication, staffing, training, motivation, conflict resolution, time management, and legal and ethical workplace responsibilities
- Coordinate dining room and beverage operations, including guest service, point-of-sale processes, front-of-house/back-of-house communication, and responsible alcohol service.

World Food Safety Organization’s Food Protection Manager (FPM) Exam
The primary purpose of the WFSO USA FPM Exam is the evaluation and certification of those candidates who wish to secure or maintain Food Protection Manager Certification in accordance with the criteria and standards established by the Conference for Food Protection, and the FDA Food Code. It is designed to test and assess food managers on knowledge, skills, and abilities relevant to the prevention of foodborne illness and meet the requirements for a Certified Person in Charge of a food service operation serving the public.
