- Prepare and evaluate stocks, broths, soups, mother sauces and derivatives, pan sauces, condiments, seasonings, marinades, and other flavor-building components
- Apply nutrition, dietary-sensitivity, allergy-inclusive, sodium-reduction, and plant-based cooking principles when adapting recipes and planning dishes
- Produce and present breads, quick breads, pastries, custards, souffles, chocolate preparations, and plated dishes using foundational baking and presentation techniques
- Plan and support kitchen production using recipe conversion, written requisitions, purchasing specifications, receiving procedures, storage systems, inventory controls, and food-cost considerations
- Apply communication, supervision, leadership, motivation, conflict-resolution, time-management, dining-room, beverage-service, technology, and guest-service practices in foodservice operations
- Implement manager-level food safety controls involving personal hygiene, contamination prevention, time-temperature management, facility compliance, HACCP, and food safety management systems while preparing for the WFSO Food Protection Manager exam

The primary purpose of the WFSO USA FPM Exam is the evaluation and certification of those candidates who wish to secure or maintain Food Protection Manager Certification in accordance with the criteria and standards established by the Conference for Food Protection, and the FDA Food Code. It is designed to test and assess food managers on knowledge, skills, and abilities relevant to the prevention of foodborne illness and meet the requirements for a Certified Person in Charge of a food service operation serving the public.
